This is especially settling to the intestines because of the burdock root!
[from the Cancer Prevention Diet by Michio Kuchi & Alex Jack, p.468]
1 Cup Lentils
2 onions [I like sweet onions best]
1 carrot, diced
1 small burdock root, peeled & diced [I just use a piece of a root, that I buy at the Japanese grocery store]
1 qt spring or filtered water
1/4 to 1/2 teaspoon sea salt
1 Tablespoon chopped parsley
Wash lentils. Layer vegetables starting with onions, then carrot, burdock, and lentils on top. Add water and pinch of salt. Bring to a boil. Reduce flame to low, cover, and simmer for 45 minutes. Add parsley and remaining salt. simmer 20 more minutes and serve. Shoyu [soy sauce] may be added for flavor.
[If you make a big pot of this, and get sick of the flavor, it can be updated with fresh herbs - basil, thyme, curry, tarragon, etc. Add the herbs before you reheat it and it's a whole new dish, with new energy.]
