Polenta

6 cups filtered or spring water
2 teaspoons sea salt
1 3/4 cup yellow or white cornmeal
frozen corn
1. Bring water, salt and corn to boil until corn is cooked through.
2. Gradually whisk cornmeal into boiling corn and water.
3. Cook until thickened.
4. Empty into 9x9 cake pan or other container to cool and shape
5. Cut into desired shapes and eat.
[There are as many variations to this as you can imagine. For example, substitute apple juice for the water and leave out the frozen corn for a dessert. Top with a fruit sauce.]
