Soft Brown Rice

[from The Cancer Prevention Diet by Michio Kuchi and Alex Jack, p.459]

1 cup brown rice
5 cups filtered or spring water
pinch of sea salt
Wash rice and boil or pressure-cook in water with salt as in previous recipes. However, no all of the water will be absorbed. Rice should be creamy, and some of the grains should be visible after cooking. In case water boils over while pressure-cooking, turn off flame and allow to cool off. Then turn on flame again and continue to cook until done.

Note: Makes a nourishing and appetizing breakfast cereal. Especially recommended for cancer patients and other who have difficulty swallowing or holding food down.

Variation: Vegetables such as daikon or Chinese cabbage or an umeboshi plum may be added while cooking. Also, a 1-inch square of dried kombu is highly recommended.
